Enrique Olvera, the owner of Pujol in México City, is a passionate advocate for preserving tradition and biodiversity. He works directly with Indigenous communities who grow endangered foods, featuring their products on his menu.
“I think we can have a huge impact not only in agriculture but in the way that people eat and therefore in the health of people, in the way our cities grow, in the way that our culture is carried," Olvera says. “It has an influence in almost every part of society.”
We chose to highlight Chef Olvera for his commitment to culture and the health of others!
Spicy Pea Guacamole
1 serrano chile, chopped
1/2 cup chopped cilantro
1/2 cup thawed frozen peas
2 medium Hass avocados—peeled, pitted and chopped
Kosher salt
Tortilla chips, for serving
In a mortar, mash the chile with the cilantro. Add the peas and avocados and mash until well blended but still chunky. Season with salt and serve with chips.
