Chef Degan Septoadji is a celebrated Indonesian chef known for his expertise in traditional Indonesian cuisine, which he presents with a contemporary twist. He began his culinary career in Germany and has cooked at prestigious venues, including the 3 Michelin-starred Restaurant Schwarzwaldstube. At his Bali-based Café Degan, he serves signature dishes using fresh, local ingredients like turmeric, ginger, and lemongrass with a unique cooking style that emphasizes authenticity and rich, layered flavors. Chef Degan has also promoted Indonesian cuisine globally through culinary demonstrations at institutions like Le Cordon Bleu.


We chose to highlight Chef Septoadji for his culinary philosophy around using fresh, superfood ingredients like turmeric. This spice is native to Southeast Asia and has traditionally been used for its medicinal purposes before becoming an integral part of cuisine.

 

Recipe: Bumbu Kuning Yellow Spice Paste
 
3.5oz shallot, peeled
3.5oz garlic, peeled
1.8oz ginger, peeled
3.5oz candlenuts, fried
3.5oz lemongrass, cleaned
2.0oz galangal, peeled
1.4oz turmeric, peeled
150ml oil
Blend all ingredients except the oil in a blender or grinder. Add oil to heated wok or pot. Add spice past and cook on a medium heat until evenly cooked. Remove from the stove and cool down before storing in refrigerator.
 

Kare Ayam Mild Indonesian Curry

Serves 4:

3tbsp vegetable oil
4 tbsp Bumbu Kuning yellow spice paste
250ml coconut milk
250ml chicken stock
21oz chicken thigh, cubed
5oz carrot, cleaned and cut
5oz zucchini, cleaned and cut
2 pcs red chilli
1tbsp fried shallots


Heat up the oil in a pot. Add the Bumbu Kuning and sweat until fragrant. Add coconut milk, stir evenly and cook for 1 minute. Pour in chicken stock and bring up to boil. Add chicken and carrot, reduce heat to simmer. Cook until chicken is half cooked before adding zucchini. Once chicken is cooked, turn off the heat, add chilli and sprinkle with fried shallot before serving.
